Hygienic heat exchanger memiliki pola plate khusus yaitu tipe chevron yang dirancang khusus untuk kondisi hygienic. Pola plate khusus memiliki sejumlah titik kontak yang tersedia untuk produk yang mengandung pulp dan serat. Terdapat dua skema pada hygienic heat exchanger yaitu <em>Single Pass<\/em> dan <em>Multi Pass<\/em>. Terdapat dua media yang mengalir melalui saluran alternatif yaitu port di bagian atas dan plate di bagian bawah. Media panas yang mengalir pada satu flow memindahkan panas melalui <em>thin plates<\/em> ke media dingin pada <em>flow<\/em> lainnya. <em>Counter-current flow<\/em> ini memungkinkan transfer dan perpindahan panas yang baik.
